Ingredients

  • 1.5 lb carrots peeled and sliced into 1/2-inch rounds
  • 1 tsp kosher salt
  • 6 cup water
  • 3 tbsp unsalted butter
  • 2 tbsp honey
  • 0.25 tsp black pepper

Equipment

  • 1 large saucepan

Method

  1. Bring the water and salt to a boil in a large saucepan.
  2. Add the carrots.
  3. Cook for 8 to 10 minutes, until fork-tender.
  4. Drain the carrots and return the saucepan to the stove over medium heat.
  5. Add the butter and honey.
  6. Stir for 2 to 3 minutes, until the carrots are glossy and coated.
  7. Remove from the heat.
  8. Stir in the black pepper.
  9. Serve.

Notes

For the glossiest coating, stir the carrots gently until the butter and honey cling to every round. Refrigerate leftovers for up to 4 days; freezing is not recommended because the carrots can soften. For a vegan version, use plant-based butter and maple syrup.
