Crispy bacon Brussels sprouts roast on a rimmed baking sheet until the sprouts are tender with browned edges and the bacon is crisp. Cut-side-down roasting helps the sprouts develop golden, caramelized edges.

Ingredients

  • 1.5 lb Brussels sprouts trimmed and halved lengthwise
  • 6 oz bacon thick-cut, cut into 1/2-inch pieces
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. On an 18x13-inch rimmed baking sheet, toss the Brussels sprouts with the olive oil, kosher salt, and black pepper, then arrange them cut sides down.
  3. Scatter the bacon pieces among the sprouts in a single layer.
  4. Roast for 25 to 30 minutes, stirring once after 15 minutes, until the sprouts are tender with browned edges and the bacon is crisp.

Notes

Keep the Brussels sprouts cut-side down so they brown well. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the sprouts can turn soft. For a lighter variation, thick-cut turkey bacon can replace the bacon.
