Ingredients

  • 2 delicata squash medium, about 1 1/2 pounds total
  • 1.5 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Preheat the oven to 425°F.
  2. Line an 18x13-inch rimmed baking sheet with parchment paper.
  3. Rinse and dry the squash.
  4. Trim off the ends.
  5. Cut crosswise into 1/2-inch rings.
  6. Scrape out the seeds and stringy centers.
  7. Toss the squash rings with the olive oil, kosher salt, and black pepper until evenly coated.
  8. Arrange the squash rings in a single layer on the prepared baking sheet.
  9. Roast for 20 to 25 minutes, turning the rings halfway through, until tender and browned at the edges.

Notes

For even browning, arrange the squash rings in a single layer and avoid crowding the baking sheet. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the rings can become soft. Avocado oil can be used instead of olive oil.
